Perhaps the most-loved variety of Winter squash, butternut squash is to Thanksgiving what pumpkin is to Halloween: ubiquitous. Reasonably priced and versatile, with a long shelf life, these mild, vibrantly-hued veggies are at their best during the cold days ahead. When selecting, look for squash free of bruises, feel heavy for their size, and have a matte skin.

Recently, I praised butternut squash for its mild sweetness and versatility — but I was surprised when so many of you said you'd never prepared one before, or find it hard to work with. Since it'd be a bummer to miss out on this Fall vegetable at home (unless you can afford $400 for an automated butternut squash peeler!), I thought I'd help you out with instructions on how to prep it yourself. One of my favorite Fall ingredients is butternut squash. It's incredibly versatile and lends an autumnal, pumpkin-ish flavor to everything from salad to soup to macaroni and cheese. Unlike the seasonal produce of Summer, many cold-weather vegetables can not be enjoyed raw.

If you are interested in experimenting with a new type of Fall ingredient, why not try acorn squash? That's what TeamSugar reader llendril did recently. She expertly stuffed the squash with a scrumptious mixture of chicken sausage, black beans, onions, and peppers.

One of the best things about this time of year is the abundance of gorgeous and delicious winter squash. Unlike their summer counterparts, winter squash have thick, hard skin and seeds; the flesh is firm and requires cooking. Some varieties are available year round, but winter squash are best now through winter.

Today marks the first day of fall, and as the weather shifts from warm summer nights, to cool fall evenings, it's time to put the barbecue away and gear up for lovely Sunday dinners. Although it's still a little early, many squash varieties, such as acorn, are at their peak. To get you into the swing of fall, I thought we'd start things off with stuffed acorn squash.

Thanksgiving is one of my favorite holidays because I love all the warm, savory dishes. This one has been in my family for years and it's sweet, creamy, and has a crunchy topping that reminds me of homemade mac and cheese.
