I've discovered Quinoa flour! I was able to easily substitute 1/2 cup of the all purpose flour with Quinoa flour. This added a full 8 gms protein and only 4 gms of unsaturated fat.

I came home to find two brown bananas, so rather than just tossing them, I made some quick and easy banana nut muffins. Enjoy
1 cup flour
3/4 teaspoon baking soda
1/4 teaspoon salt
2 brown bananas
1/2 cup brown sugar
3/4 cup butter-melted
1 egg
1/2 teaspoon pure vanilla
1 cup walnuts chopped
1. Preheat oven to 375 degrees and butter a muffin tin (it makes about 9 muffins)

I know, I know, I've been going crazzzy with muffins lately, but I just can't help it!
Muffins are so darn good, their like mini cakes, ready to eat, just right portion sized lil cakeys.

I hate banana, but my mother loves preparing this pie:
INGREDIENTS
3 tablespoons brown sugar
1/2 cup water
10 bananas, peeled and sliced lengthwise
2 cups whole wheat flour
2 cups toasted wheat germ
3 cups rolled oats
1 cup packed brown sugar
1 cup light margarine
1 tablespoon cinnamon
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Sprinkle 3 tablespoons of brown sugar over the bottom of a small saucepan or skillet. Cook over medium heat until melted.

One of the many positives of having a brother who lived in London was that my mother became obsessed with recreating this desert that she had while she was there, banoffee pie (the name gets the celebrity couple treatment - banana + toffee = banoffee!). My mother made her version with a rich gourmet caramel sauce she bought, and I have read suggestions of using canned Dulce de Leche (the toffee is fussy to make from scratch). The pie is delicious, although I will pretty much eat bananas in any figuration!

lunch-ALOT.(2mouth of pancake cake + one banana+ one coffee-cheese bread +two curry bun+one mmushroom cheese bun+one sponge cake+on mouthful of charsiew bun and two mouthful of fish burger + barley) ewwwwwwwwwwwwww.
