I got this recipe from "Cook's Illustrated" magazine's "The Best Light Recipes cookbook".
I absolutely love the taste of cheesecake, but not the hips, butt, and stomach that appears after the indulgences. This recipe manages to keep all the best things about cheesecake and take out the worst part: the high fat content.

Serves: 4 Prep Time: 5 minutes Cook Time: 15 minutes
Ingredients:
4 medium white onions (peeled and sliced thin)
1 Tbsp butter 2 ½ cups whole milk salt to taste
2 Tbsp truffle oil Lumiére
Directions:
Gently sweat sliced onions in butter in a medium sauce pan until translucent and tender.
Add milk and bring to a boil. Remove from heat and blend immediately.
