Dear Hungry Hilda
I've got a great recipe that should take no longer than 30-40 minutes. Chinese Chicken Lettuce Wraps have no carbs and since they are small you can eat however many you want (within reason) and it will slow you down, so by the time you reach to make your fourth, you may actually even feel full! Perfect. Enjoy:

CHINESE CHICKEN LETTUCE WRAPS:
2 cups fresh shitake mushrooms
1 1/2 lbs thin cut chicken breasts (or tenders)
2 tbsp vegetable oil
1 dash of course salt and course black pepper
3 garlic cloves chopped
1 inch piece of ginger (finely chopped)
zest of one orange
1/2 red bell pepper (diced small)
1 can of water chestnuts chopped
3 scallions chopped
3 tbsp hoisin sauce
1/2 head of iceberg lettuce (quarter into wedges)
1 head of Boston bibb lettuce (separate leaves)
PREPARE AND COOK:
Slice the mushroom and chop the chicken into small pieces. Preheat a large skillet to high and add oil to the pan. Add the chicken to the pan and sear the meat by stir frying for one to two minutes. Season with dashes of salt and pepper. Next add the garlic and the ginger. Cook for 1 minute.
Grate the orange zest into the pan (keep the orange). Add the chopped bell pepper, water chestnuts and scallions. Cook for one minute. Add the hoisin sauce and toss to coat the mixture evenly. Transfer the hot chopped chicken to a platter and pile the wedges of iceberg lettuce along side. After you zest the orange, cut it and add it to the platter as garnish.
TO EAT:
Pile the chicken mixture into the Boston bibb lettuce leaves, fold and eat.

31Hey, I love this dish and it's certainly nutritious enough, but it's really not the kind of thing you can eat and eat and eat and expect to lose weight. All things in moderation, right? This dish still has lots of calories and it is NOT no-carb. It's not even LOW carb.
First off, water chestnuts are super starchy-carby. One cup has 17g.
Also, hoison sauce? One of the first ingredients is sugar.
And definitely don't eat that orange garnish if low-carb is what you're aiming for...

My Gfriend and I went on a diet while on vacation where we had a light salad (no cheese or croutons and small serving of lite dressing) for lunch and lettuce wraps from PF Chang's for dinner everynight. We didn't drink alcohol or cheat in any way. Sometimes we has the PF Chang's for lunch and didn't even finish it. We exercised for 45 minutes /day. We did this for 4 days and then got on the scales when we got home. We BOTH gained 3-4 lbs. At first, we thought it must have been water weight - but when we were back to the old routine, the weight didn't drop off like water weight does.
It came off slowly over 2 more weeks. We looked up the calorie content online and it was SHOCKING. I'll never eat another super fattening PF Chang's lettuce wrap. Phooey!

42I tried this dish and it was very good , I used Sesame seed oil instead of vegetable had some presidents choice honey hoisin sauce so used that and as the store I went to had Portobello mushrooms I used those instead of sh*take. I put the mushrooms in after the chicken, recipe left out this step which is why I check the food-net work. I hate to say this but the recipe looked familiar, with just 1 changed ingredient it is the same as a Rachel Ray Recipe (love that girl ), though I know how recipes get passed around and changed, this is a favorite topic at work.

Alright, finally made it yesterday. Went for a more Thai version of the dish. Used ground chicken, some lemon and lime juice, and 1/4 ground peanuts. Added some regular onions and 1 chili pepper as well. Came out GREAT! I am not into the whole lettuce wrapper deal, so just ate it plain with some rice.
44I am not a health freak and don't care about watching carbs but this food idea looks good.
45I just tried this recipe tonight. I couldn't find the hoisin sauce to I used some other stir fry sauce i found at the store. I was following the recipe step by step and I have a big question!!! It says to slice the mushrooms but it doesn't say when to add them. So when am I supposed to add them to my pan?
